Volkswagen Polo temprature gauge

i have a problem with the temprature gauge in my car. the engine managment light is on aswell. i can start the car from cold ok but some times when the engine is hot the engine floods and takes a while to start again. the temprature gauge takes a long time to get up to the correct temp and sometimes drops back again then back up. i have just changed the ignition coils on the car and helped abit for a while.

Check temp transmitter / sensor .Also test thermostat , maybe stuck open .
