Volkswagen Polo stalling for first few minutes

Past couple of days my Polo has been stalling when slowing down/pulling away for the initial minutes of driving. It'll stall completely silently, and I'll only notice through the power steering and battery light on the dash.

It starts up fine again (1st time) and we're away again, it'll do this perhaps 2-3 times and then be fine for the rest of the journey.

I've tried to see if this correlates with the weather, it seems most of the time it is when it has been sat for a prolonged amount of time (6 hours+) in the damp.

Another issue which perhaps could be related is when idling the car will fluctuate in revs, dropping below 1000 RPM - act as if it is going to stall and then recover, it does this every 10 or so seconds. Not severely, just engine shudders a bit and exhaust rattles a little. This has always been present, since I owned the car.

I've read this could possibly be the Idle Control Valve or air entering through somewhere or the throttle body? What is it most likely to be?

Recently had cam belt, water pump and new radiator.
