Vauxhall Vectra won't speed up, then suddenly goes fast!

Intermittently, when the engine is cold, it doesn't accelerate properly, stays pretty slow,then all of a sudden takes off quickly - feels like it's trying to run away with me. It doesn't always happen. I thought it might be the rubber mat getting stuck under the accelerator pedal, but it happened yesterday when the mat hadn't got pushed forwards. any help appreciated, as I'm starting not to trust it to run properly. Thanks

I'm not sure what may be wrong, but a cold diesel engine is sluggish first thing, yours is a turbo I assume ?
Has it always done it.
It could be possibly that you are using too higher gear and the car struggles to gain speed but the turbo kicks in and off you go.

Just a thought
