Very hard to diagnose intermittent problems especially if no codes are stored. I would locate the live wwires one at a time. Eg fuel pump, ECU etc carefully connect a small bulb and place it where you can see it whilst driving. Maybe this would point you in the right direction. Usually an immobiliser won't come on whilst driving unless there is a power loss. Does everything do dead ?

Common Vauxhall problem from around 99 is a really bad connection on the back of the speedo its just a plastic ribbon and relies on pressure inwards for a connection, I've seen corsas zafiras, astras and vectras with this issue. When driving all the clocks go to zero and you loose power, try pushing the clocks hard inwardss, see if that helps.
