Ford Focus temp gauge

after finding out my engine had a hairline crack in the block, my garage have sourced another engine for it. we got it in and running sweet and the temp gauge was fine, as apposed to it shooting into the red all of the time.
after a short trip on the motorway, i realised that the temp gauge was going down into the white to indicate that is was cold. but when you pull off it would slowly creep up and then go down again.
cant get my head round this, thought everything was ok but it seems not to be!
any suggestions as to what may be causing this to happen?

Could be faulty temp coolant sensor / transmitter .

Check wiring on temp gauge transmitter switch ,could be just bad connection .
